Thoreau, the veggie sibling to Blue Sage in Southampton, Bucks County, opened last night at 1033 Spring Garden St., (215-232-9001). Previous coverage here. It's dinner only, Tuesdays through Saturdays for now; lunch starts in March. A liquor license and outdoor seating (in the courtyard next door) are on the way.

Monday was the soft opening for El Sitio, a South American BYOB in the nifty corner spot in Collingswood previously occupied by Word of Mouth at 729 Haddon Ave. (856-240-1217). It's open all day, every day. You'll pay between $30 and $35 a head for dinner; here is the menu. I'll have more details, including a sweet family story about  husband-wife owners Francisco Cabrera and Cecilia Jaramillo, in next week's "Table Talk" column.

Today is the premiere of Paesano's South Philly sandwichery at Ninth and Christian Streets; hours are Wednesday to Sunday from 11 a.m. to 7 p.m. And if the opening menu left you boo-hooing that there's no burger, take heart. You just have to ask for it.

Rybread, a sandwich cafe from career-changing architect Ryan Pollock at 2319 Fairmount Ave., next to Illuminare, got its zoning variance, and opening is now targeting for mid-March.

    Anything new on the Manayunk scene Michael? It does not look like they have started working on the ubb spot at all yet. It looks closer on Agiato, but have you heard any word on concrete openings. Thanks

    I did a Manayunk tour last week. Aside from the Green Leaf Chinese (which looked so sad, with its tablecloths covered in clear plastic), I didn't see anything different. I think Agiato is awaiting the completion of its nearby bakery before it opens.
