Two and a half years after opening Wishbone - a cafe specializing in fried, boneless, skinless chicken - chefs Alan Segel and Dave Clouser have expanded into Midtown Village with a second location.
And once this one, at 210 S. 13th St., is up and humming, a wider Wishbone rollout is expected.
In a homespun atmosphere, the new shop adheres to the menu found at the Penn campus flagship at 4034 Walnut St. The centerpiece is the chicken tender, white and dark - no bones about it.
The chicken is brined and breaded in crushed Snyder's pretzels, whose various crumb sizes create a complex texture. It's sold by the pound. There's a refrigerated case to keep the dipping sauces at peak taste.
The menu also includes biscuits, pastries, hand pies, and other baked goods, as well as sandwiches and bottled-on-premises juices.
The new location, now in soft-opening mode next to what was the Letto Deli, plans breakfast service and refrigerated cases for beer.
