Healthy family recipe: Very veggie 'pizzas'

Very Veggie "Pizzas"

Ingredients:

  1. 4 portabella mushroom caps

  1. ½ cup low-sodium marinara sauce

  2. ½ cup of your favorite vegetables (such as onion, broccoli, peppers, spinach), diced

  3. ¼ cup shredded mozzarella cheese

Directions:

1. Preheat the oven to 350 degrees.
2. Wash and dry the mushrooms.  Remove the stems and scoop out the gills using a small spoon.
3. Place prepared mushrooms upside-down on a baking sheet.
4. Spread 2 tablespoons of marinara sauce on each mushroom.
5. Sprinkle each with 1 tablespoon of the cheese.
6. Top with 2 tablespoons of the diced vegetables.
7. Place in the oven and bake until the cheese is melted and the mushroom is warmed through.

Variations:

  1. Try bell pepper halves (slice top to bottom and remove seeds) or sliced eggplant rounds as your pizza base.

  2. Cook the pizzas on the grill for added smokiness.

  3. Punch up the flavor with seasonings like oregano, basil, garlic or spicy crushed red pepper.

  4. Make it Mexican with refried beans and cheddar instead of the marinara and mozzarella.

  5. Go Greek by using feta cheese and Kalamata olives.
