Healthy family recipe: Veggie hummus pinwheels

Try out this delicious spice duo of tumeric and black pepper in these brightly colored veggie hummus pinwheels that are packed with antioxidants!

Vegetables, fruit, whole grains, and beans contain antioxidants that can help protect our bodies from chronic diseases. Spices contain antioxidants as well, and can be used in cooking to enhance the flavors and health benefits of foods. Turmeric is a spice that contains curcumin, the antioxidant that gives turmeric its bright yellow color. Black pepper has been shown to increase the body's absorption of curcumin, when black pepper is eaten with turmeric.

Try out this delicious spice duo for yourself in these brightly colored veggie hummus pinwheels that are packed with antioxidants!

Veggie Hummus Pinwheels

Ingredients:

  1. 1 whole wheat wrap or tortilla

  1. 2 tablespoons of hummus

  1. 1/4 cup washed baby spinach leaves

  1. 1/4 cup washed and thinly sliced cucumber slices

  1. 1/4 cup washed and shredded red cabbage

  1. 1/2 teaspoon turmeric

  1. 1/8 teaspoon black pepper

Directions:

1. Spread 2 tablespoons of hummus evenly on wrap, leaving a 1 inch border around the sides

2. Sprinkle turmeric and black pepper over the hummus

3. Add a thin layer of the spinach, red cabbage and cucumbers on top of the hummus and spices

4. Tightly roll the wrap, slice crosswise into 6 pinwheels and serve
