This juicy pomegranate bark is a delicious alternative to try in place of candies that contain a long list of ingredients, additives, and food dyes. This fun to eat fruit is now in season and full of antioxidants.
Pomegranate Chocolate Bark
Ingredients:
1 cup semi sweet or dark chocolate chips
1 pomegranate, seeds removed
*Tip: Cut pomegranate into quarters. Place 1 quarter at a time in a medium size bowl filled with cold water and use hands to gently remove seeds. The seeds will sink to the bottom and the white pith will float to the top. Skim off the white pith and drain the water.
Directions:
Melt chocolate chips in a microwave safe bowl or in a double broiler
Pour the melted chocolate on a paper plate or a plate lined with parchment paper
Spread the chocolate evenly across the plate
Sprinkle pomegranate seeds on top of the melted chocolate
Place in fridge until chocolate has hardened
Once hardened, lift the chocolate off the plate and place pomegranate side down so that you are able to break the chocolate bark into bite size pieces with your hands without getting sprayed by the pomegranate seed juice
