Healthy family recipe: Peach crisp

Peach Crisp

Ingredients:

  1. ½ cup packed brown sugar

  2. ½ cup quick oats

  3. ¼ cup all purpose flour

  4. 1 teaspoon cornstarch

  5. ½ teaspoon vanilla extract

  6. ¼ cup unsalted butter, cold, sliced into small pieces.

  7. 1 tsp kosher salt

  8. 1 ½ pound fresh peaches, washed, cut in half and pit removed. ¼ inch slices

  9. 2 teaspoons lemon juice

  10. 1 tablespoon granulated white sugar

Directions:

1. Ensure the rack is located in the middle of the oven, then pre-heat oven to 425 degrees.

2. In large mixing bowl, toss peaches with lemon juice, granulated sugar and cornstarch, set aside.

3. In second mixing bowl, combine brown sugar, oats, flour, and vanilla to make the topping. Mix thoroughly.

4. Blend butter pieces into dry mixture, using your fingers to mix ingredients together to create larger clumps.

5. Stir peaches once more. Transfer to an 8 by 8 glass baking dish, creating an even layer of fruit. Sprinkle topping over peaches, covering the entire layer of fruit.

6. Bake in oven for 35 minutes, or until topping has become brown and the peaches are tender.

7. Remove from oven, place on wire resting rack and allow to cool before serving.
