Healthy family recipe: Broiled citrus gratin

Brighten up a cold winter day with a citrus dessert that is bursting with sunshine. Kids will love peeling the fruit and arranging the pieces on the pan. Ginger gives the dish a spicy kick, and the yogurt topping cools it all down. Enjoying this healthy treat will have you dreaming of warmer days ahead.
Broiled Citrus Gratin
Ingredients:
2 large navel oranges
1 small ruby red grapefruit
1 large Minneola orange (tangelo)
3 clementines
2 tablespoons sugar
1 tablespoon minced candied ginger
1/2 cup plain reduced-fat Greek yogurt
1 tablespoon orange zest
½ teaspoon pure vanilla extract
2 tablespoons sliced almonds, toasted
Directions:
1. Peel oranges, grapefruit, and Minneola orange; cut crosswise into 1/2-inch slices. Cut each slice in half to make semi-circles.
2. Peel clementines; cut into quarters.
3. Arrange citrus in a single layer on a jelly-roll pan.
4. Sprinkle with sugar and candied ginger.
5. Preheat broiler to high.
6. Broil citrus 15 minutes or until lightly charred, rotating pan occasionally.
7. Combine yogurt, zest and vanilla in a small bowl.
8. Divide citrus evenly among 4 shallow bowls. Drizzle evenly with pan juices.
9. Top each serving with 2 tablespoons yogurt mixture and 1 1/2 teaspoons almonds.
Serves 6
