Michael Schulson - chef-owner of Izakaya in Atlantic City, Sampan in Center City and a co-owner of the new Saint James in Ardmore, turns up in Men's Fitness, offering up a single-serve recipe.

It's a low-fat recipe for Szechuan-style chicken.

Schulson relates to the mag how he dropped 30 pounds by cutting out his three daily triple espressos and most red meat, white flour and sugar.

It's a brined chicken and the sauce contains Sriracha, Dijon mustard, chicken stock and low-sodium soy sauce.
