Little Meatballs

1 pound lean ground beef

1/4 cup Italian bread crumbs

1/2 cup fresh Parmesan or Pecorino Romano, grated

1. Preheat the olive oil in a large frying pan.

2. Beat the eggs in a glass mixing bowl. Add the beef, salt, bread crumbs, and cheese and mix together with your hands. Roll each meatball into tiny balls, as small as possible, the size of a chick pea.

3. When the oil is hot, add the meatballs in small amounts and fry until brown on all sides. Remove and dry on a paper-towel-covered plate. Set aside for when you are ready to add them to lasagna or soups.
