"Iron Chef" contestant Jose Garces sat today with The Inquirer's Craig LaBan for a chat.

Among the topics: That he's hot to do a sausage-and-beer concept as well as something based on "farm to table."

Garces confirmed to me that he is in lease negotiations at the Cira Centre, across from 30th Street Station, that last housed Daniel Stern's Rae.

The concept would be "farm to table" with a "healthful but flavorful" bent.

Can Garces succeed where Stern didn't?

This is a difficult location but if anyone can do it, its Starr or Garces and I root for the latter!

I think the fact that there's an escalator above the restaurant might have something to do with it's "tough location". It's in the lobby!

it is a tough location (you need to be all things to all people, Rae was too upscale for the majority of workers), but if the rent is right it could work. if you do a good lunch and happy hour you're good.

he should work out the kinks at village whiskey before he starts another restaurant. that place is incredibly mediocre. plus its starting to look greedy. but what does he care, now that he won iron chef he can start to act like morimoto. oh wait no one is supposed to know that, sorry i ruined the ending
