Oh, Hai: Major expansion for Hai Street Kitchen & Co.

Hai Street Kitchen & Co., the Philly-bred sushi burrito specialist from the company behind Genji sushi, is on the cusp of a major expansion.

First off, this spring will see a third Philadelphia Hai Street (after Rittenhouse and University City) opening inside the Shops at Liberty Place. In the summer, the region's fourth Hai Street location will join the expansion of King of Prussia Mall. (Meanwhile, there's a Hai Street Kitchen in Urbanspace Vanderbilt inside the Helmsley Building in Midtown Manhattan, and two seasonal pop-ups on the way in New York, as well.)

Second: Also at Liberty Place this spring, Hai Street will open a new concept called Ai Ramen, focusing on traditional Tonkotsu-style ramen, sushi, and bao buns. Hai Street/Genji is no stranger to ramen; last year, it began rolling out ramen bars at select Whole Foods stores. (Genji, founded in Center City in the 1980s, runs the sushi program nationally for Whole Foods.)

Third: Yet another new brand is called Wok Street, opening this spring in a former cell-phone store at 1518 Chestnut St. It's billed as a healthful fast-casual eatery where customers order bowls and banh mi with vegetables and marinated proteins, paired with white or brown rice and assorted sauces and toppings. (Sounds similar to the concept of Wokworks, which began its customizable Asian bowl thing in fall 2013 at 1935 Chestnut St.)
