Cinder: Sour beers, wood-fired pizzas, and more in Center City

Teddy Sourias' next bar/restaurant is on tap for November. Executive chef is Jonathan Petruce, who over the summer was the pop-up chef at Uptown Beer Garden.

After six months of work transforming a Center City food market into a bar, Teddy Sourias of Craft Concepts (BRU Craft & Wurst, U-Bahn, Uptown Beer Garden, Finn McCool's Ale House) says his latest spot - Cinder - will open in early to mid-November at 1500 Locust St., a few steps west from Fado and across from Misconduct Tavern.

Sourias has brought in as executive chef Jonathan Petruce, who over the summer was the pop-up chef at Uptown. Petruce formerly co-owned Petruce et al., a Craig LaBan three-beller, in Center City.

Cinder, which will have a 30-foot black walnut bar and polished concrete floors, will also serve 30 to 50 bottles, 10 wines by the glass, and an additional 20-plus by the bottle. Cocktails will include seasonal and traditional with a focus on local spirits, fruits, herbs, and mixers.

Among the dishes on the menu:

Al pastor pizza (marinated pork shoulder grilled over fire, tomato-red pepper sauce, mozzarella, diced pineapple, jalapeno, finished with fresh cilantro, radish, pecorino and extra virgin olive oil).

Pistachio pizza (bechamel sauce topped with mortadella, shallot, pistachio, rosemary, finished with pecorino and extra virgin olive oil)

Saison mussels (P.E.I. mussels, chickpeas, dried apricot, saison, garlic, shallot, saffron, oregano, butter)

Tuscan kale salad  (Tuscan kale, pickled butternut squash, candied pepitas, madras curry, star anise, cinnamon, extra virgin olive oil)

Dimitri Armenakis of Lance Kramer & Associates (who designed U-Bahn, Cin Cin, Kitchen Bar and Nectar) is architect. Sourias, Armenakis, and Masterminds Agency are listed as interior designers, using stone and copper, smoky-greyish blue tones.
