Jose Pistola's opening Sancho Pistola's in Fishtown

Sancho Pistola's location is the short-lived Bubba's Texas BBQ at the corner of Girard Avenue and Leopard Street (19 W. Girard Ave., between Frankford Avenue and Front Street).

Jose Pistola's, the funfunfun Mexican beer bar in Rittenhouse, just inked a deal for its second spot.

For Sancho Pistola's in Fishtown, owners Joe Gunn and Casey Parker are bringing in chef Adan Trinidad as a partner. He will oversee both kitchens

The location is the short-lived Bubba's Texas BBQ at the corner of Girard Avenue and Leopard Street (19 W. Girard Ave., between Frankford Avenue and Front Street).

They hope to open a week before the Super Bowl. Initially, it will be open from dinnertime to late night and weekends for brunch.

Parker says Sancho Pistola's menu will be a modern Mexican theme similar to Jose Pistola's but with some additions, such as a raw bar, an assortment of steamed buns, and more mid-priced entrees (but many tacos).

They plan an extensive tequila and mezcal list with a smaller international and domestic craft beer bottle list, and both indoor and outdoor seating.

Pistola's, open about seven years in the former Copa Too at 263 S. 15th St., has hit its stride this year with the hiring of the Puebla-born Trinidad, a vet of El Vez and Alma de Cuba.

The Inquirer's Craig LaBan recently said Trinidad makes one of the best tortilla soups in town, as well as hand-pressed masa sope cups filled with tender braised goat.

"The runaway hit, though, has been his Latin-Asian fusion of puffy white handmade steamed buns folded around slow-braised pork carnitas," he wrote.
