Taco time: Sancho Pistola's brings in guest chefs

Chris Kearse, chef/owner of East Passyunk's Will BYOB, is up first.

Sancho Pistola's, the cantina on Girard Avenue from the Jose Pistola's crew, is launching what it calls the Fishtown Taco Exchange Program.

In sum, they will bring in chefs to collaborate on tacos with chef/co-owner Adam Trinidad.

First up - and this is one night only, Monday, March 24 from 9 p.m. to midnight - will be Chris Kearse, chef/owner of East Passyunk's Will BYOB.

The "Will Sancho?" taco is filled with grilled lamb's tongue, coleslaw, and carrot BBQ sauce.

You get two tacos for $13.

Oh, and since this is an exchange - right? - what does Kearse get? " Probably a lot of mescal and high-fives," says Sancho's rep Felicia D'Ambrosio.
