Ed Doherty, the gregarious industry vet familiar to area beefeaters from Capital Grille and Union Trust, among many other restaurants, now wants to get you caffeinated. Last Tuesday, he opened Stable Coffee Company at 1801 N. 10th Street, the first of what’s sounding like several new cafes to enter the highly competitive Philly java arena.

Doherty is teamed with Miguel Miranda, his partner in One Degree Hospitality; Joe Volpe of Cescaphe and Vie; and PMC Property’s Ron Caplan on the project, which resides in the ground floor of Caplan’s Kardon/Atlantic apartment complex at 10th and Montgomery. (The historically registered property was originally used as a stable, hence the coffee house’s name.) “The apartment market has really heated up,” says Doherty, citing the past-few-years influx of empty nesters returning to urban areas. “Ron was looking to upgrade his places and provide new amenities for his apartment dwellers.”

This means that more Stables will be introduced to PMC-operated buildings in the near future. “We have a couple more in the pipeline,” he says. Doherty won’t commit to naming specific locations just yet, but mentions they’ll eventually have storefronts on both Walnut and Chestnut streets in Center City.

As far as the introductory Stable's stable of offerings — they're serving La Colombe coffee, smoothies and gourmet sodas to drink. Scones, muffins and sweets are housemade. For savory stuff, they've got panini (grilled chicken with pepperjack; tomato/mozz) and salads (chicken caesar; mixed greens).
