Nolen Family Caesar Dressing

Makes 2 cups 2 egg yolks 1/4 cup lemon juice 5 anchovies 1 teaspoon Worcestershire sauce 1 tablespoon Dijon mustard

1/4 cup lemon juice

5 anchovies

1 teaspoon Worcestershire sauce

1 tablespoon Dijon mustard

1 teaspoon freshly ground black pepper

1 garlic clove

1/4 cup water

2 cups canola oil

1 pint grated Parmesan

1. Place egg yolks and lemon juice in blender. Start on slow speed, and blend until incorporated.

2. Add anchovies, Worcestershire sauce, garlic, black pepper, and Dijon, and blend. Turn the speed up to medium high, and add water.

3. Once the water is incorporated, slowly drizzle the oil into the blender, and blend.

4. Remove from blender, and stir in Parmesan. Refrigerate.

Per two-tablespoon serving: 303 calories; 6 grams protein; 1 gram carbohydrates; no sugar; 31 grams fat; 40 milligrams cholesterol; 361 milligrams sodium; no dietary fiber.
