It continues the evolution of Asian fusion, begun 20 years ago by Susanna Foo.
There is a symmetry as bittersweet as homemade hoisin to the notion that Jose Garces' Chifa is building its Chino-Latino head of steam at the same moment Susanna Foo has announced plans to turn off the lights for good at her seminal atelier of French-Chinese cuisine.

From the moment my wife and I walked into this place I knew I wasn't forking out money for a great dining experience. Instead, I was paying to experience the lameness that is downtown Philly fusion dining. The concoction that was put in front of me, (that they tried to pawn off as food) was so distasteful and unpleasant that I felt like any minute a man with a camera was going to jump out and tell me I was on a new version of candid camera. The reason we decided to come to Chifa is that my wife is from Ecuador and loves ceviche. We ordered ceviche and it came with one plantain, we laughed. Did I mention we were sitting in the basement, we were sitting in the basement with the barmaid. I had at least three martinis of some sort(expensive they were). We tried a few dishes and they were terrible. We continued ordering dishes like we were gambling, maybe the next one would be a winner. For example, the pork belly sandwiches were like steamed pork fat on white bread. At the time, I was thinking how I would give anything to pull out a McRib from my pocket and chow down. In closing, this place is a joke and proves that people will eat food just because they think it is supposed to taste good.
