Sovana Bistro, still one of Chester County's best restaurants, has become intensely committed to local flavors. It serves a special "100 Mile Menu" that draws most ingredients from within that radius. And even the creative pizzas here have a local and seasonal accent, as evidenced by this unusual flatbread topped with Chester County pumpkin. Ribbons of this heirloom squash are grilled to a snappy sweetness before they're layered with the crunch of smoked bacon, with creamy dabs of piquant gorgonzola cheese. A streak of rosemary-infused local honey brings those delicately balanced flavors to a heightened sweet and savory finish.
