Good Taste

Were it not a week after Thanksgiving, I might wax about the roast turkey at Joe Beef, the sandwich stand that Joe Tucker recently carved into one side of his Walnut Street restaurant, Joe Pesce.

So I've come to praise Joe Beef's Big Beef sandwich.

They start as 50- to 60-pound roasts from Port Richmond's Kissin Fresh Meats, which Tucker's guys cook for 12 hours in a bath of carrots, onions and seasonings. Without sparing the juice, they carve off about a half-pound and place it on a kaiser roll from Liscio's Bakery. It's perfect as is, or for the South Philly experience, add sharp provolone and broccoli rabe.
