DOM'S FAMOUS GARLIC CRABS

1 dozen cleaned crabs

1 cup olive oil

1 stick butter

10-12 cloves minced garlic

Old Bay Seasoning to taste

To clean crabs, remove top shell and run under water thoroughly to remove all dirt inside and on the surface of the crab. Sprinkle crabs with Old Bay. Melt butter with olive oil in sauce pan. Lightly cook garlic over low heat. Sauté crabs in pan with garlic mixture for about 15 minutes. Serves 2.

BARBERA'S HOMEMADE

CRAB CAKES

2 green peppers, diced

1 medium yellow onion, diced

1/4 cup olive oil

16 oz. jumbo lump crab meat

1 cup bread crumbs

1 egg

2 tablespoons mayonnaise

1 teaspoon dry mustard

1 tablespoon Old Bay Seasoning

2 tablespoons fresh parsley, chopped

Black pepper to taste

Bread crumbs

Olive oil

Sauté green pepper and onion in 1/4-cup olive oil. Cool.

In medium bowl, combine sauteed vegetables with the crab meat, 1 cup bread crumbs, egg, mayonnaise, mustard, seasoning, parsley and pepper. Shape into patties and lightly coat with more bread crumbs.

Heat more olive oil in a frying pan on medium, brown crab cakes 2 to 4 minutes on each side. Makes 6.
