Recipe: Quinoa Breakfast Cereal
- 1 1/2 cups skim milk or milk alternative
- 1/2 cup rinsed quinoa
- ¼ tsp vanilla extract
- 2 teaspoons pure maple syrup
- Pinch of ground cinnamon
- Sliced banana
- Chopped apple
- Shredded coconut
- Nuts and seeds
- Bring milk, vanilla, cinnamon and quinoa to a boil in a small saucepan.
- Simmer, covered, until most of milk is absorbed, about 10-15 minutes.
- Remove from heat and stir in maple syrup.
- Add toppings.
