Recipe: Energy Truffles
- 6 dates, pitted
- ½ cup raisins
- 2 T. coconut oil
- 1 cup walnuts
- 3/4 cup unsweetened, shredded coconut
- 1/2 cup cocoa powder
- 1-2 T. water to thin
- In a food processor combine raisins, dates and coconut oil (melted). Add to that the dry ingredients and pulse to form a dough. Add water, as needed to thin it out.
- With wet hands, scoop a 1-2 T. heap of batter into hands and roll into a ball. Coat with coconut or chopped nuts or leave as is.
- Refrigerate or freeze to firm it up. Enjoy!
