Recipe: Quinoa Breakfast Cereal

Ingredients:

  1. 1 1/2 cups skim milk or milk alternative

  2. 1/2 cup rinsed quinoa

  3. ¼ tsp vanilla extract

  4. 2 teaspoons pure maple syrup

  5. Pinch of ground cinnamon

Toppings:

  1. Sliced banana

  2. Berries

  3. Raisins

  4. Chopped apple

  5. Shredded coconut

  6. Nuts and seeds

Directions:

  1. Bring milk, vanilla, cinnamon and quinoa to a boil in a small saucepan.

  2. Simmer, covered, until most of milk is absorbed, about 10-15 minutes.

  3. Remove from heat and stir in maple syrup.

  4. Add toppings.
