Healthy family recipe: Sweet and tangy melon salad

Trying new fruits and vegetables can sometimes be intimidating. Pair a new fruit or vegetable with a familiar one to encourage kids to give them a try.

This summer melon salad includes a less commonly known root vegetable called jicama which can be found in some supermarkets and Mexican, Latin American, and Asian markets. Jicama has a crisp, juicy, and nutty flavor sometimes described as a savory apple. It is also a great source of fiber which helps you feel full for longer. You’ll need to wash and peel the jicama’s brown skin with a knife before eating. 

The cantaloupe paired with the jicama in this recipe makes a crisp, refreshing summer salad. Try this delicious salad as a side for a summer picnic or BBQ. 

Sweet and tangy melon salad


  • 1 cup jicama (1 medium jicama root) peeled and diced into cubes
  • 1 1/2 cups cantaloupe, cubed
  • 1 tablespoon chopped fresh mint
  • Juice of 1 lime
  • 1 teaspoon honey
  • Pinch of salt, to taste
  • Optional: 1/4-1/2 teaspoon chili powder if you like a little bit of spice


1. Stir together the melon, jicama and mint in a medium size bowl.

2. Whisk together the lime juice, honey, salt and chili powder if using. Pour the dressing over the melon and jicama, and toss to coat. Serve immediately or refrigerate up to 24 hours.

Tip! You may also substitute honeydew or watermelon if your kids prefer.
