Planning to take part in Cinco de Mayo festivities but also counting down the days until you’re on that beach for Memorial Day Weekend? You can still have a fiesta while working on that beach bod!

In honor of the popular Mexican celebration coming up next week, we have a weekly guide of recipes for you to get in the holiday spirit.

While typical Mexican foods are often loaded with fat, carbs and calories, there are ways to make your own Mexican meals lighter and healthier. Making small substitutions with healthier ingredients can add up and trim off calories without altering the taste.

Using leaner meat in enchiladas and low-fat cheese in quesadillas are just some of the ways these recipes are lightened up for a healthier dish.

So whether you’re gearing up for a fun fiesta with your family, or just want to have a good time with some friends, try out these Cinco de Mayo-inspired recipes.
