Montgomery Pie

Makes 1 (9-inch) pie (8 servings)
1/2 cup dark molasses
1/2 cup sugar
1 large egg
1 cup water
2 tablespoons flour
3 tablespoons freshly squeezed lemon juice
1 tablespoon grated lemon zest (colored part of peel)
1 unbaked 9-inch pie shell
2/3 cup sugar
4 tablespoons ( 1/2 stick) butter, at room temperature
1 large egg, beaten
1/2 teaspoon baking soda
1 1/4 cups flour
1/2 cup buttermilk or sour milk (see note)

1. Prepare the filling: Combine the molasses, 1/2 cup sugar, 1 egg, the water, 2 tablespoons flour, the lemon juice and lemon zest, mixing well. Pour filling into the prepared shell.
2. Make the topping: Beat the 2/3 cup sugar and the butter until light and fluffy. Add the beaten egg; mix well.
3. Sift or stir the baking soda with the 1 1/4 cups flour. Slowly add the flour mixture to the butter mixture alternately with the buttermilk. Spread topping over filling.
4. Bake pie in a preheated 375-degree oven until the crust is browned and the filling is set, about 35 to 40 minutes.
Note: To make sour milk, mix 1/2 cup minus 1 1/2 teaspoons milk with 1 1/2 teaspoons lemon juice or white vinegar.
Per serving: 323 calories, 4 grams protein, 60 grams carbohydrates, 40 grams sugar, 8 grams fat, 72 milligrams cholesterol, 172 milligrams sodium, 0.7 gram dietary fiber.
