Madeira Sauce

1 tablespoon butter

1/2 large onion, finely chopped

1 tablespoon all-purpose flour

3 thyme sprigs

1 bay leaf

1 cup beef consomme or beef stock

1 tablespoon red currant jelly

1 heaped teaspoon ketchup

Salt and pepper

6 tablespoons Madeira

1. In a saucepan, melt the butter over gentle heat, add the onion, and saute until softened, 5 to 10 minutes. Add the flour and stir, before adding the herbs, consomme or stock, red currant jelly, ketchup, and salt and pepper.

2. Simmer for 10 minutes, then add the Madeira and simmer for an additional 5 to 10 minutes. Season to taste.

3. Remove the herbs, then cool before freezing. When ready to serve, let stand at room temperature for about 4 to 6 hours, then warm gently in a pan before serving.

Per serving (based on 6): 43 calories, 1 gram protein, 3 grams carbohydrates, 1 gram sugar, 2 grams fat, 5 milligrams cholesterol, 157 milligrams sodium, no dietary fiber.
