Style: A latke - the traditional Jewish potato pancake - doesn't necessarily have to be made with just potatoes. Any number of vegetables will work. "The way we do it," Aron, proprietor of Maccabeam, on 12th Street near Walnut, once told me, "is to blend carrots, zucchini, cauliflower, celery, red pepper" and" potatoes. We put it in a blender so it becomes small pieces, then add a couple of eggs, a little salt, pepper, and then deep-fry them."
