Style: New chef and co-owner David Cox has brought some much-needed stability to this charmingly historic Chester County inn, in operation since 1814. Cox delivers some excellent French country cooking, much of it a cheese-centric homage to his tenure at Manhattan's Artisanal. If service and the wine cellar ever catch up, the old inn could soon relive its heydays.
Specialties: Stilton fondue; parmesan gnocchi; snail pithiviers; macaroni and cheese; duck confit; rabbit with pappardelle; scallops with salsify three ways; cheese plate; cheesecake; chocolate tart.
Alcohol: A small starter list, but with 14 nice choices by the glass (Elk Cove pinot gris; Sierra Cantabria Rioja) and some good bottles, from Strub Riesling spatlese ($59) to Marquis Phillips Shiraz ($48). List should expand significantly as restaurant matures.
