Tart and sweet vinegar

Subarashii Kudamono, the unlikely orchard devoted to Asian pears in the Lehigh Valley, experimented with a pear ice wine several years back. That went awry - and now, they're offering pear wine vinegar that's aged five years for a flavor mellow enough to accentuate a green salad or slices of fresh mozzarella.
