Belgiu-delphia brewing
Philly Beer Week's annual mission to Belgium for a collaboration beer this year paired Dock Street Brewery's Justin Low with Brouwerij Dilewyns' Anne-Catherine Dilewyns, whose Vicaris has made her one of the country's rising beer stars. Their collaboration uses Vicaris tripel as a base, but adds honey to the fermentation instead of sugar, leaving the finished ale drier and lighter than many tripels. Nonetheless, I taste an ethereal ghost of sweet-tart strawberry lingering on the finish. Deliciously drinkable. Dilewyns is also in town for Beer Week and helping Dock Street brew a sibling Philly tripel with local honey called "Plan B," expected to be available at Dock Street (701 S. 50th St.) within a few weeks.
