Mexican night at home is something we always look forward to. It’s even better when Mommy doesn’t have to be in the kitchen for hours prepping and cooking!
I often make these easy beef enchiladas for Mexican night. As simple as these are, both on effort and ingredients, they’re still my son’s favorite enchiladas for me to make at home.
You can easily adapt the flavors to suit your family’s likes; maybe add some green chilies, black olives or black beans. The possibilities are endless when you have such a great base recipe.
Oh, and they are super easy on the budget too! You might have all, or most of what you need, already in the kitchen.
Easy Beef Enchiladas
3 to 4
- 8 corn or flour tortillas
- 1 lb ground beef
- 1 (16-oz) jar picante sauce (like Pace), divided
- 8 oz shredded sharp cheddar cheese, divided
- Sour cream, optional
- Green onions, optional
Preheat oven to 325°F. Wrap tortillas in foil. Place tortillas on oven rack and warm for 5 to 7 minutes. Remove tortillas from oven and increase heat to 350°F.
In a large skillet, brown beef seasoned with salt and pepper, until no longer pink. Drain if necessary. Add ½ cup picante sauce and 1 cup cheese. Mix well and cook until combined.
Spread ½ cup picante sauce in the bottom of a 13 x 9-inch pan. Spoon 2 to 3 tablespoons of beef mixture down the center of each tortilla. Roll tortillas and place seam side down in pan. Top with remaining picante sauce and cheese. Bake uncovered for 20 minutes until heated through and cheese is melted. Top with sour cream and green onions, if desired.
