Garlic Bread Wings
Preheat oven to 450°F. Toss 3 lb chicken wings with 2 Tbsp canola oil, salt, and pepper. Put wings on a wire rack set on a foil-lined baking sheet. Roast 30 minutes. Meanwhile, mash 4 garlic cloves and ½ tsp salt into a paste using the flat of a knife. Melt ½ stick butter in a pan over medium heat; add garlic paste, 1 tsp onion powder, and 1 tsp garlic powder. Cook 3 minutes. Toss wings with garlic butter and 1 cup grated Parmesan in a bowl. Return wings to rack and roast 8 minutes. Meanwhile, bring 1 (15-oz) can crushed tomatoes to a simmer in a saucepan; add 1 tsp dried oregano and 2 minced garlic cloves; simmer 10 minutes. Serve wings with tomato dip.
Everything Bagel Wings
Preheat oven to 475°F. Toss 2½ lb chicken wings with 2 Tbsp canola oil. Season with salt. Arrange wings on a wire rack set over a foil-lined baking sheet. Roast 15 minutes. Let cool 5 minutes; reduce temperature to 375°F. Beat 3 egg whites in a large bowl; add wings and toss to coat. Combine 2 Tbsp poppy seeds, 2 Tbsp sesame seeds, 1 tsp coarse sea salt, 2 tsp caraway seeds, 2 Tbsp dried onion flakes, 2 tsp granulated onion, and 2 tsp granulated garlic in a bowl. Dredge each wing in spice mix on both sides; return to rack. Roast until golden, 10 to 12 minutes. Meanwhile, slice 2 scallions; separate green and white parts. Cook scallion whites in 1½ tsp canola oil in a saucepan over medium heat, 5 minutes. Stir in 6 Tbsp cream cheese, 2 Tbsp goat cheese, and ¼ cup milk. Stir until heated through. Remove from heat and stir in scallion greens. Serve wings with dip.
Sweet-Spicy Thai Wings
Pour 1½ inches vegetable oil into a large pot. Warm over medium-high heat until a deep-fry thermometer reads 400°F. Season 2½ lb chicken wings with salt; put on a parchment–lined baking sheet. Sprinkle with 2 Tbsp cornstarch; toss to coat. Sprinkle with 2 more Tbsp cornstarch; toss to coat. Fry wings in batches until golden, 12 minutes per batch. Transfer to a wire rack to drain. Melt ½ stick butter in a pan. Add ¼ cup honey, 2 Tbsp Sriracha sauce, 1 Tbsp fish sauce, 1 Tbsp soy sauce, and juice of 1 lime; boil. Toss wings with sauce in a bowl.
