Wishbone: Fried chicken for University City
A pedigreed poultry palace will replace Lee's Hoagie House at 4034 Walnut St.
Chefs Alan Segel and Dave Clouser were looking for something to collaborate on.
"We wanted something real cravable, something we wouldn't make at home, but something elavated to a higher level," said Segel, who with his wife, Nicol, founded Tierra back in the 1990s in Gulph Mills. Clouser was chef-owner at Sola in Bryn Mawr.
Enter fried chicken.
The two plan to open Wishbone at 4034 Walnut St. in University City, on the former site of a Lee's Hoagie House. The Lee's location closed June 12 after 28 years as owner Lois Zucker retired. Lee's owner Allan Lewin said that the building's owner, Campus Apartments, wanted a different tenant in the spot and added that he wanted to see the Lee's brand resurface in the neighborhood.
Segel and Clouser, fine-dining veterans, intend a shop with takeout, delivery, some seating, a small menu, and, according to Segel, "no pretense."
Opening is projected for October.
