Agno Grill: Build your own meal in Rittenhouse

Build your dish at this quick-serve at 2104 Chestnut St.

Entrepreneurial twins Kriti and Kunal Sehgal are using their organic Rittenhouse cafe Pure Fare as a springboard for a healthful quick-serve cafe around the corner serving what they bill as "a new kind of Mediterranean."

Agno Grill is now open at 2104 Chestnut St., which last was a branch of El Fuego. The Greek word Agno (or αγνο) means pure.

You order at the counter. Start with one of three bases - spinach salad, black rice, or a gluten-free lavash-like wrap. Then add one of five proteins - grilled chicken, steak, veggies, baked tuna, or falafel.

Then choose three toppings - such as pickled beets, roasted carrots, braised radicchio, or cucumber tomato salad.

Add two sauces - such as harissa, hummus, tahini, tomato cumin or roasted creamy pine nut - and you're done.

Figure on $7.50 for the vegetable up to $9.50 for tuna. Housemade sodas, too. A yogurt bar is on the way.

Chef Sarah Ginn, who makes everything from scratch, is doing double duty at both restaurants.

The quick-serve custom-building is reminiscent of the system at Saladworks, as well as honeygrow and the forthcoming Wokworks.
