Truck Stop: Foolish Waffles

FOOLISH WAFFLES Finally here: We haven't been this excited since the Surf and Turf Truck rolled into LOVE Park and we started running up Filbert Street for steak and lobster bisque. Hey, did you know there are different types of waffles? We didn't. So we tried both that Foolish Waffles co-owners Robin Admana and Florence "Flo" Gardner had to offer.

Finally here: We haven't been this excited since the Surf and Turf Truck rolled into LOVE Park and we started running up Filbert Street for steak and lobster bisque. Hey, did you know there are different types of waffles? We didn't. So we tried both that Foolish Waffles co-owners Robin Admana and Florence "Flo" Gardner had to offer.

Liege: The sweet, buttery liege waffle ($5) is a darn near perfect dessert, with chunks of pearl sugar that do amazing caramelizing things when baked. For a bit extra, try one with mascarpone whipped cream, black pepper bacon toffee, salted caramel, a scoop of ice cream or one of the many other "lil' somethings" on the menu. This food trucker got powdered sugar all over his shirt, then wiped it away wistfully, remembering the time he had that perfectly chewy liege waffle five minutes ago.

Brussels: The lighter, rectangular waffle is used for waffle wraps. Try the fried chicken and waffles ($8.50) with buttermilk fried chicken, cabbage apple slaw, pickled bourbon jalapenos and chili honey; or the breakfast sandwich ($7.50) with scrambled free-range eggs, sharp cheddar cheese, thick-cut bacon and Lancaster County maple syrup. Other options include pork belly banh mi waffle ($8.50); strawberry rhubarb waffle ($7); and granola waffle ($6).

Story: Admana fell in love with waffles while traveling around Europe. She felt it was time to bring a waffle truck to Philly, so she and Flo made it happen. "I didn't really see anything like that around here," Admana said. "We wanted to do waffles. It's sort of a blank canvas." They hit the streets in early April.
