Everyone has a night that is an easy dinner night.  Whether you are giving in to take out, using up left overs or a scheduling a “fend for yourself night”, I am pretty sure every meal planner builds in a day for a simple dinner.

Mondays are just a tougher day for me with dinner, so I always have something that just about cooks itself for the beginning of the week to ease off the stress.  I have put together 5 of my favorite “lazy day” chicken dinners to make mealtime nearly effortless.
