Jump-start the swimsuit season with 5 fresh salads

For much of the U.S., it’s been a long, cold, seemingly unending winter. Though the calendar shows we officially flipped to spring last week, you’d barely know it. Even here in North Carolina, where winters are usually short, mild, and snowless, we’re bracing for more wet, freezing weather in the next few days. Hello! Could someone please tell Mother Nature that this is the last week of March and that, here in the South, the barren dogwood branches are supposed to be floating with lovely white blossoms rather, than sporting another layer of cold, shiny ice?

Though it seems quite doubtful to many of us, summer is coming! It always does, and you know what? Now is the time to get prepared for those long, lazy, flipflop and swimsuit-clad days. Ouch! Does that thought scare you a bit? Perhaps you’re like me, and have added a few extra pounds over the course of this extended chilly, comfort food-filled winter. Around our house, meals just tend to be a bit heavier during the cold months, and winter clothing does a pretty good job of covering up a little bulge here or there. That won’t be the case in a month or two (depending on which latitude you reside in).

Need a partner to prepare for warm weather with? First, get motivated by perusing your summer wardrobe and imagining the warm sunny days ahead, when a pair of shorts and a light T-shirt will be the clothing du jour. Then, follow me; I’ve got a fabulous lineup of light, lean meals that don’t compromise on delicious taste. They’re fresh, fun, and anything but boring. After all, heaven knows, we’ve had enough of boring this winter. Check them out!

Fattoush Salad - Possibly the freshest, most delicious salad you’ll ever have the pleasure of meeting.

Shaved Asparagus & Sweet Corn Salad w/ Fresh Lemon Dressing - This one just seems to scream “spring” with some of our favorite seasonal ingredients.

Green on Green Couscous Salad - With couscous and lots of fresh herbs, you’d never know this delicious salad is light, lean, and the perfect antidote to chase away the winter blues (it helps with the extra pounds too!)

Baby Bok Choy and Blackberry Salad w Avocado-Basil Vinaigrette - A fresh, fabulous, spring-inspired salad that will delight family and friends alike. The dressing is bursting with the lovely flavors of avocado, basil, ginger, and honey.

Thai Steak & Noodle Salad - This is probably my favorite salad of all time. It’s a copycat recipe from Houston’s Restaurants which are found in larger cities across the U.S.
