Truck Stop: Cherry Bomb Bus

Best-seller here is the "walking taco."

What to eat: Best-seller here is the "walking taco." We can attest to its deliciousness, but apparently we ate it the wrong way - on a plate while sitting down. A properly constructed walking taco consists of an open Fritos bag or Doritos bag stuffed with black beans, meat (pork confit is owner Jen Zavala's favorite), mozzarella cheese, salsa (watermelon habanero in the summer!), lettuce and Mexican sour cream. Zavala will mix it up, stick a fork in it and send you on your way. "It's not conventional to walk around eating out of a chip bag, I suppose," Zavala said. "But it works."

The menu: Tends to be all over the place, but in a good way. On any given day, you might find Banh mi, pierogi, stew, smoked meats and vegetarian and vegan options. "I really like changing my menu to showcase all the foods I love to eat and can cook as a chef," Zavala said. "Ask for it, I'll make it."

Chef: Zavala has worked at El Camino Real, Xochitl and Farmers' Cabinet, and was a contestant on Bravo's" Top Chef." Her @foxyladychef Twitter profile describes her as a "bad-ass knife swinging lil' mamacita." Sounds about right.

Bottom line? Zavala can cook!
