That Jose Garces is an All-American guy, for sure.

The Ecuador-rooted, Chicago-bred chef-owner of Amada, Tinto, Distrito, and Chifa has been shifting his flavor profile farther Stateside with his newer spots, Village Whiskey and Garces Trading Co.

For his next act, he's going into the Cira Centre, across from 30th Street Station, with JG Domestic, Fine Food and Spirits -- whose menu and drinks all will be sourced to the U.S.A. (The concept will not be farm-to-table, as previously believed.)

Tuesday morning marks the opening of Garces Trading Company, Jose Garces' sixth project in four years and four months.

Well, it's the seventh if you count his Mercat a la Planxa in Chicago. And eight, if you include his winning a spot on Iron Chef America, for which he has shot five episodes (one has been shown).

Garces Trading is a U-shaped gourmet market/cafe -- and in a first-of-its-kind arrangement with the state Liquor Control Board -- has a mini-State Store inside. Buy a bottle and uncork it right there, or take it home. The cafe is 7 a.m. to 10 p.m. Mondays through Fridays, 8 a.m. to 10 p.m. Saturdays and Sundays. Full service meals: 11 a.m. to 10 p.m. daily. Wine shop hours will be 10 a.m. to 10 p.m. Mondays-Saturdays; noon to 5 p.m. Sundays.

Here's a selected assortment of restaurant openings. (Wild card here is Stephen Starr, who seems to have some things, plural, up his sleeve besides the Mexican restaurant at 2013 Chestnut and besides the New York-style pizzeria takeout/delivery spot next to Parc.)

First off, Du Jour's Commerce Square location (2001 Market St., 215-735-8010) is open for weekday breakfast/lunch.

Second, Marc Vetri's Amìs opened Thursday, Jan. 14. (News here and here and here.)
