All the while Aaron Clark had been a front-of-the-house veteran for restaurateurs Stephen Starr and Daniel Stern, he also considered himself a “backyard warrior” — grilling and smoking for family and friends.

He’s gone pro with Smoke BBQ, setting up with a Southern Pride 400 at 34 W. Merchant St. in Audubon, Camden County. The contemporary decor has been lightly changed from the space’s last tenant, Crux Cafe.

Clark, who’s using USDA Prime brisket, Duroc pigs, and naturally raised chickens on a menu, is open from 11:30 a.m. to 8 p.m. Monday to Saturday.
