Xolo: Mexican taqueria in Bryn Mawr

There's a Mexican boomlet underway on the Main Line, what with the ultra-casual El Limon opening its fifth suburban location at the former Tres Guppy's at 845 Lancaster Ave. in Bryn Mawr and Pipeline Taco opening shortly at 165 E. Lancaster Ave. in Wayne.

The most ambitious of the openings is Xolo Tacos, occupying the former Fuji Mountain just off Lancaster Avenue next to the fire station at 14 N. Merion Ave. in Bryn Mawr (610-527-7777).

Philadelphia-born, Mexican-raised Carlos Fink and his wife, Hayley, of Lower Merion, bought the building. They have transformed the sushi counter into a full-service bar specializing in tequilas and added stylish touches, such as enormous chandeliers and artwork in the two-story space.

The big news is in the kitchen: Chef is Alfredo Aguilar, who is also chef-owner of Las Cazuelas in Northern Liberties. (See this profile.)

Carlos Fink, who grew up in Mexico City and moved back to his birthplace in 1986 to study at Temple University, has worked in various restaurant roles, from dishwasher to general manager, in restaurants such as the White Dog Café, London Grill, Ristorante Panorama, and Hershey Hotel.

They offer guacamole prepared tableside, vegetarian and carne tacos, huevos, enchiladas, soups, burros, fajitas, and tortas, plus housemade desserts. Expect dinner entrees such as pollo poblano ($19.50), trucha al limon ($21.50), and cochinita pibil ($17.50).
