Four Seasons bartender Chris Simpson is one of the partners in The Wine Thief, a American comfort-fooder with a wine emphasis, coming to the old Bitar's space at 7152 Germantown Ave. in Mount Airy, just up the block from Earth Bread + Brewery. (The corporation name of The Thirsty Monk LLC led to recent blogosphere confusion over the trade name.)

Simpson, who says the menu will have a healthful, local-sourcing bent, is targeting May for the opening. 

As for the name. Ask any oenophile. It's not felonious (or even misdemeanor-ous) in origin.

If you are lucky enough to be able to walk to this place it just may become your new #1/default. The food I've had so far has been EXQUISITE! Original, tasty, gorgeous presentation. Atmosphere - way urban. (as in Brooklyn, SoHo, Lower East Side)Prices VERY reasonable. Superb customer service. So definitely worth the drive from anywhere in the Philly area! You will not be disappointed!
