Rex 1516's chef steps down due to health

POSTED: Tuesday, December 18, 2012, 4:42 PM

Citing doctor's orders, Regis Jansen has stepped down from his post as executive chef at Rex 1516 (1516 South St.).

The affable Alabaman, 29, was born with cystic fibrosis. Several months ago, a rep for the restaurant says, his doctor urged him to leave, as long hours and stress exacerbate his symptoms.

Justin Swain, his sous chef at 1601, a longtime buddy and a part of Rex's team since its opening, will take over. Swain is a graduate of the Restaurant School.

Craig LaBan's review of Rex 1516 is here.
