Restaurant notes: Vinny T's gone

Openings; "Montreal" bagels; want to get into the restaurant biz?

  1. Vinny T's of Boston, a big-portion Italian-feed concept, has folded its Wynnewood Square Shopping Center location. In its place will be ... a Buca di Beppo's, come fall.

  2. A couple of public opening dates: Adsum, Matt Levin's bistro at Fifth and Bainbridge Streets, is scheduled for Wednesday, July 14. ... Paloma, the haute Mexican replacing Meza Luna at 763 S. Eighth St., is up for Thursday, July 15. ... Sign of life, in the form of an awning, at the forthcoming Philadelphia Chutney Co. at 1628 Sansom St.

  3. How about a hot, wood-fired Montreal-style bagel with customizable shmear? That's Larry Rosenblum's plan for Spread Bagelry, a cafe coming just after Labor Day to 262 S. 20th St., a storefront next to D'Angelo's and across from Twenty Manning Grill. (The deal was first noted by MealTicket.) Rosenblum, whose grandfather was a bagel baker in Poland, and partners Mark Cosgrove (who's in construction after a spell cooking at the long-ago Frog) and Jane Gallina (a former pastry chef at Brasserie Perrier and Le Mas Perrier before moving to front-of-house roles at Vetri and London Grill). Rosenblum says they'll stock local/organic cheeses, and customers can mix in their choice of ingredients, a la Cold Stone Creamery. Rosenblum hopes for four or five more locations, including West Philly and Northern Liberties. Montreal bagels are bathed in honey and water before they're baked in wood-fired ovens. Rosenblum says that local varieties in water should make for a bagel that is between a true Montreal and a New York style.

  4. If you're starting a restaurant, note that the Pennsylvania Restaurant Association will run an all-day Philadelphia Food & Beverage Forum on Monday, July 19 at Community College of Philadelphia's Winnet Student Life Building. There will be workshops and panel discussions with  speakers from the Philadelphia Dept. of Health, Drexel University, and the Enterprise Center talking about issues including permitting, promoting, and financing.   5. A fund-raiser at the Kildare's Irish Pub in Manayunk (4417 Main St.) on Thursday, July 29 (7-9 p.m.) will benefit the Greater New Orleans Foundation; this time the hat is being passed for oil-related issues. The $20 cover will include a buffet, drink specials, and silent auction.
