Slow-roasted root vegetable pave.

Ross Olchvary, former sous chef and chef de cuisine at Horizons, has ventured into New Hope with Sprig & Vine, a stylish, all-vegan BYOB, in Union Square.

It's a few doors from Triumph Brewery, off Bridge Street, just south of Main Street.

Pier One-ish dining room has dark wood tables, and comfy banquette and table seating. There's an open kitchen.

A few winners: slow-roasted root vegetable pavé (soft polenta, rosemary and red wine-braised shallots, $17), edamame falafel ($7), cornmeal-crusted tempeh ($18).

It's open for dinner Tuesdays-Saturdays. Next week, lunch will be on Wednesdays-Saturdays. Sunday brunch will start in a few weeks.
