Ex-Nomad apprentice opening pizzeria in Lambertville

Chris Bryan earned his MBA from Temple and decided to do something with it:

Learn the art of pizza-making.

He joined the crew at Nomad Pizza's flagship in Hopewell, N.J., one of the region's destinations of Neapolitan-style pies. (There's a Philly location at 611 S. Seventh St. as well as an offshoot, Nomad Roman, at 1305 Locust St.)

Later this month, Bryan and business partner Danny Popkin of Modern Recycled Spaces plan to open Liberty Hall Pizza in Lambertville, N.J., at Canal Studios (243 N. Union St.). Menu will include Neapolitan pizzas, locally sourced salads, and root beer floats.

They have the services of a wood-fired Valoriani brick oven in their industrial space (exposed steel beams, brick walls, polished concrete floor, gas lanterns, oversized factory door), and will use Antimo Caputo “00” flour, Italian tomatoes, mozzarella di bufala and extra virgin olive oil for the 12-inch pies. 

Liberty Hall will be open for dinner only Tuesdays through Sundays for dine-in and takeout.

Popkin owns Canal Studios, whose tenants include Rojo’s Roastery and OwowCow Creamery.
