Garces alum MacGregor Mann opening a BYOB

Chef MacGregor Mann, who left Jose Garces' fold to do his own thing (including a stage at Noma in Denmark and a backwoods experience as chef at Henry's Fork Lodge in Idaho), is setting up his own BYOB in Chadds Ford.

He just signed to take over what was Village Diner in the Old Village Shops on Route 202, just south of Route 1.

He's calling it Junto, taken from the name of a social club founded by Ben Franklin. The building will get a new roof and porch, and the interior will receive a makeover.

Junto will serve Pennsylvania-sourced ingredients prepared with a blend of old world techniques and modern cuisine knowledge. He's from York County, and he has worked with local Amish to learn centuries-old pickling and protein-preservation techniques.

Mann - like Village Whiskey/Tinto chef Dave Conn and Cantina/La Calaca/Taqueria Feliz co-owner Tim Spinner - was part of Garces' TV team of sous chefs at the start of Garces' Iron Chef career.

Mann is working at La Calaca Feliz (Fairmount) for the immediate future.

He is targeting a spring opening in Chadds Ford.
