Carmel Cafe & Wine Bar has heavy hitters behind it.

Florida wine bar coming to Main Line

A Florida-based cafe and wine bar with a cool pedigree has its sights set on the Philly area.

Carmel Cafe & Wine Bar - which started in Tampa less than three years ago and now has four locations in the Tampa Bay area - has a lease at 372 W. Lancaster Ave. in Wayne, previously the site of HogFish Bar & Grill and its predecessor, Flavor.

Another Carmel location is being considered near the Wegmans store at Street Road and Route 611 in Warrington.

Carmel's concept is lighter, Mediterranean-inspired fare with a healthful bent, explains Terry Ryan, a cofounder. Ryan was behind the posh Oceanaire during its brief tenure at Seventh and Walnut Streets. The other founder is Chris T. Sullivan, who years ago headed Outback.

Great beer bars, by the numbers

The entire restaurant - from the back-of-the-house operations to the guest menus - is run off of iPads. See this case study by Apple.

If permitting goes smoothly, Ryan says, the Wayne location should open in July or August.

There's more coming to Radnor Township, by the way. A casual branch of Estia - the luxe Center City Greek restaurant - and a Pietro's Coal-Fired Pizza will take space in a new retail project at 200 S. Radnor-Chester Rd. (When I initially wrote about this project back in January, I incorrectly located it in Wynnewood.)
