DiPlacido to guest-chef at The Saloon

The Saloon, the classic, upmarket Bella Vista Italian steakhouse, is getting a lighter touch at dinnertime on Monday, Aug. 12.

The Saloon, the classic, upmarket Bella Vista Italian steakhouse, is getting a lighter touch at dinnertime on Monday, Aug. 12.

Stacey DiPlacido, chef at the Saloon's more casual nearby bruncherie, The Fitzwater Cafe, has a guest-cheffing date at the mother ship. And though this is a one-nighter, she is practically bursting at the chance to be the Saloon's first female chef in more than 40 years.

"I'm thrilled for the opportunity and honored to be an Italian woman from South Philly cooking at the Saloon," she said.

The Saloon's regular menu will be offered, but DiPlacido will add some of her more contemporary dishes, including house-made ricotta, eggplant meatballls, grilled baby octopus, proscuitto-wrapped monkfish, polenta under a glass, egg yolk ravioli, and fresh pastas.

DiPlacido also is a chef instructor at Cook, near Rittenhouse Square.
